  1. Get 1 cup Semolina (Suji)
  2. Make ready 2 Onions finely sliced
  3. Get 2 Chilies Green finely chopped
  4. Take 1 inch Ginger
  5. Get 1 Carrot finely chopped
  6. Get 2 - 3 tablespoons Ghee
  7. Get to taste Salt
  8. Make ready 3 Cups Water
  9. Take 1 tablespoon Mustard seeds ( Rai/ Sarso)
  10. Take 1 tablespoon lentils Split Black ( Urad Dal)
  11. Prepare pinch Hing
  12. Take 1 Sprig Curry Leaves
  13. Take 1 number Chilies Dry Red ( Optional)
  14. Take 4 tablespoons coriander Finely chopped (dhania)
  15. Get 1 tablespoon Ghee
Instructions to make Semolina Upma:
  1. Boil 3 cups of water in a deep pan and keep aside.
  2. Heat the Ghee in a pan and add the mustard seeds.
  3. When the seeds crackle, add the split black lentil, Hing, curry leaves, onions,green chilies and ginger and saute on a medium flame till the onions turn translucent.
  4. Add the chopped carrots and saute on a slow flame for another 3 to 4 minutes.
  5. Add the hot water and salt and bring to a boil and let the vegetables cook in the water for 3-4 minutes before adding the semolina.
  6. Now, reduce heat and slowly add the Semolina to the water and mix it continuously so that lumps don’t form and it combines well with the water.
  7. Combine well till it forms a gooey paste.
  8. Reduce heat and cover with lid and let it cook for 5 minutes.
  9. Add 1 tablespoon of Ghee on hot upma for nice Aroma
  10. Garnish the Upma with coriander and Serve immediately.
