The ingredients needed to make Southwest Pasta:
  1. Prepare linguini, or pasta of your choice
  2. Take garlic, minced
  3. Prepare canned black beans, drained & rinsed
  4. Get vegetable oil
  5. Make ready canned diced tomatoes, undrained
  6. Take picante sauce
  7. Take onion powder
  8. Get chili powder
  9. Make ready ground cumin
  10. Prepare dried oregano
  11. Prepare shredded Colby Jack cheese blend
  12. Get fresh cilantro
Steps to make Southwest Pasta:
  1. Cool pasta according to package directions. Drain.
  2. Heat vegetable oil in large skillet over medium high heat until hot. Add garlic. Saute for a few seconds. Add undrained tomatoes, picante sauce, black beans, chili powder, cumin & oregano and mix well. Bring to a boil, stirring occasionally. Reduce heat to low & cover.
  3. Simmer sauce, stirring occasionally, for 15 minutes. Remove cover. Increase heat to medium high. Cook, stirring frequently until reach desired consistently, about 5 minutes.
  4. Add pasta to sauce. Toss. Serve with cheese & cilantro sprinkled on top.
