  6. Make ready a pinch Orange colour (optional)
  7. Get 3 Chopped dates

  1. Take a pan.Add ghee and coconut and roast it properly.
  2. Add sugar to the same pan.
  3. Add coconut & sugar to the same pan. and cook together on a medium flame.
  4. Mixture turns gooey and bubbly. Add cardamom powder. Continue to cook until the mixture comes together and turns thick. It also begins to leave the sides of the pan.
  5. Now divide the mixture into two pan..In one pan, add orange colour and mix well.There will be two colour mixture now- orange and white. You can also add chopped dates in the white mixture.
  6. Pour it immediately to two different greased plate, foil or butter paper. Level it well and make a square with the spatula.
  7. Allow to cool down for about 15 mins. Cut them to desired sizes while it is still warm.
  8. Garnish with pumpkin seeds.
  9. Cool and store coconut barfi in a air tight jar.
