The ingredients needed to make Cabbage Dum Aloo:
  1. Make ready 400 gms cabbage
  2. Get 4 medium sized potatoes
  3. Make ready as per taste Salt
  4. Make ready 4 tbsp Mustard oil or as per your choice
  5. Prepare 2 bay leaves
  6. Prepare 1 black cardamom
  7. Prepare 1 cinnamon stick
  8. Get 1 tsp cumin seeds
  9. Prepare 2 slit green chillies
  10. Take 3 slickly chopped onion
  11. Get 1 chopped tomato
  12. Make ready 1/2 tsp turmeric powder
  13. Take 2 tsp red chilli powder
  14. Take 1 tsp cumin seeds powder
  15. Take 1.5 tsp coriander powder
  16. Get 1/4 cup peas
  17. Prepare 1/2 tsp garam masala
  18. Take handful Chopped fresh coriander leaves for garnishing
Steps to make Cabbage Dum Aloo:
  1. Let’s roughly chopped the cabbage as in the picture and peel the potatoes and cut them half. Let’s take both in the pressure cooker, add half teaspoon salt and 1 glass of water. Let’s take the 3 whistles on high flame. Switch off the gas and keep the cooker aside to make it cool down.
  2. Now let’s take the pan, add some oil and once the oil is hot then add way leaves, cinnamon stick, black cardamom and cumin seed. Once the cumin seeds are crackled, let’s add green chilli and chopped onion one by one and sauté on low medium flame.
  3. Once the colour of onion changed, then add ginger garlic paste and sauté for a min with the onion. Now let’s add the chopped tomatoes and add 1/2 tsp salt, mix them well and now cook it for 4-5 mins on low flame by covering the lid. Once the tomato’s are soft then add 1/2 tsp turmeric powder, 2 tsp red chilli powder, 1 tsp jeera powder, 2 tsp coriander powder and mix it well. Cook it for 2 minutes on low flame.
  4. Now let’s add 1/3 cup of vegetable stock in masala and cook it for another 2 mins on low flame. Now add peas, boiled cabbage & potatoes. Now add salt as per your taste, 1/2 tsp garam masala powder and mix it gently and cook it on low flame for another 4-5 mins by covering the lid. Now Cabbage dum Aloo is ready and serve it hot with chopped fresh coriander leaves on top of it😋
