  3. Prepare 1-2 tsp vanilla essence or 1 vanilla pod, split open and cut in half
  4. Prepare A few sprigs of fresh thyme
  5. Take 2-3 tbsp water
  6. Take To serve - not necessary but nice 😁
  7. Prepare toasted flaked almonds
  8. Prepare 1 drizzle or two of raw honey
  9. Take some ricotta or goats cheese or Greek yogurt

Roll out to the thickness of your cutter and cut your scones. A simple, moist lemon sponge soaked with thyme and lemon syrup. Tastes wonderful served with thick, creamy Greek yoghurt. Gradually mix in the flour, baking powder and almonds.

Instructions to make Baked apricots with lemon and thyme:
  1. Preheat the oven to 190C.
  2. In a shallow oven-proof dish, lay out the apricots (with the hollow from the stone facing up). Nestle the lemon zest and thyme in amongst the apricots.
  3. Drizzle the water and vanilla essence on top. (If using a vanilla pod, tuck it in amongst everything.)
  4. Bake for about 20 mins.
  5. Drizzle the raw honey on top. Serve with the almonds/ cheese/ whatever and enjoy πŸ˜‹

Tastes wonderful served with thick, creamy Greek yoghurt. Gradually mix in the flour, baking powder and almonds. To test whether the cheese is ready, gently lift the muslin up by the corners and twist lightly - the liquid should be slightly milky in colour.
