To begin with this recipe, we have to first prepare a few components. You can have bruschetta using 11 ingredients and 4 steps. Here is how you cook it.
The ingredients needed to make Bruschetta:
Prepare Crusty bread, sliced and on griddle to toast, or lightly toast in a regular toaster - 3 slices per person
Take Sweet cherry tomatoes - 2 or 3 per bread slice, depending on size
Make ready Basil - 3 leaves per slice of bread
Make ready Evoo, s&p
Take Garlic, sliced
Make ready Oregano
Get 1 small red chili sliced (can use dried)
Make ready Ricotta cheese w pinch s&p (cottage cheese works too) - about a tablespoon per bread slice
Make ready Mid sized bocconcini - a little less than the ricotta or cottage cheese you used
Get Sundried tomatoes - about 100g finelychopped
Get Red wine vinegar 2 tblsp
Instructions to make Bruschetta:
Tomatoes, evoo, s&p, sliced garlic, oregano, chili. Mix and either oven for 3 mins at 220C or put on stove, lid on, medium heat for 15 mins, then lid off for 5 to reduce. Shake.
Mash ricotta or cottage cheese, s&p and bocconcini with fork
Chop finely, sundried tomatoes with vinegar and olive oil, until a moist paste.
Rub toasted bread w garlic. Sprinkle with evoo. Add sundried paste then cheese mix, then basil, tomato and evoo.
