  1. Prepare 1 Zucchini
  2. Make ready 1 Red Onion
  3. Get 1 Red Bell Pepper (or any other you like)

  7. Get Tomato Sauce
  8. Prepare 1 Can Diced Tomatos

Instructions to make Chili beans:
  1. In a pan add olive oil, garlic, onions, bell peppers, carrot and zucchini. All cut in cubes.
  2. Let it cook for 10min
  3. Add the ground beef and let it cook, breaking the meat
  4. When the ground beef is cooked add the canned beans rinsed and drained. Add the tomatoes, tomato sauce, broth. Stir and let it cook for about 30min
  5. Spice it up with oregano, cumin, salt and pepper
  6. Cilantro to garnish
  7. If you want it veggie, add quinoa when adding the beans
